This from scratch, yeast bread tastes just like the Italian Herbs and Cheese Bread from Subway and will become a new family favorite! While you do need to allow some time for the bread dough to rise, the actual hands-on time is very minimal and well worth it for this fresh homemade bread!

I’m not the biggest fan of Subway and have only been there a handful of times in my life. But every single time I went, I would get the Italian Herbs and Cheese Bread.

And it never disappointed. Something about that addition of the extra seasoning and the melted cheese took what would be a basic white bread roll and elevated it to something magical!

Luckily for you, this copycat italian herb bread recipe for the Subway rolls will have you making this at home any time you want!

How to Make Copycat Subway Italian Herbs and Cheese Bread

The ingredients to make this yeast homemade bread recipe are pretty basic, and you should have most of them at home already!

Ingredients for Italian Herb and Cheese Bread

1 1/2 cups warm water (100 – 110 degrees F)
1 1/2 tsp active dry yeast
2 tsp sugar
1 tsp salt
4 1/2 cups bread flour
1 tbsp butter, melted
1 tsp garlic powder
2 tsp Italian seasoning
1/2 cup Monterey Jack cheese, shredded
1/2 cup Parmesan cheese, shredded

The exception that you might not keep on-hand (and I don’t either!) is bread flour. Don’t worry, though! If you’re looking for a bread flour substitution, the answer is as simple as all-purpose flour!

I know, then what’s the point of specifying that you need bread flour? The old bread flour vs. all-purpose flour debate is really as simple as the rise factor. Your bread will rise more if you use bread flour. That doesn’t mean you won’t still get a good rise by using all-purpose flour, though.

And honestly, if it comes down to having to buy a whole new bag of flour just for this recipe, just use your all-purpose flour, and you’ll never know the difference.

Directions to Make Italian Herbs and Cheese Bread

If you’ve ever made homemade yeast bread before, this recipe will be very straightforward. If you haven’t, well, I still think it’s a pretty straightforward recipe!

In fact, it’s a good basic bread recipe if you’re a beginner. I use my stand mixer with the dough hook attachment to handle the kneading for me, which makes it even easier. You can always knead by hand if you don’t have a dough hook attachment. (but go ahead and get one because they make it SO much easier!) To make the bread, in a large mixing bowl or stand mixer, combine the water and yeast and allow to sit for 10 minutes to dissolve. You really do need to let this sit for 10 minutes, so don’t rush this step.

Then add the sugar, salt, and flour to the yeast mixture. Attach the dough hook and knead for 10 minutes at low to medium speed.

Turn the dough out onto your work surface and cut the dough into 4 equal parts. Shape each piece into a log of bread.

Place each log of bread dough on a parchment-lined cookie sheet, making sure to leave about 4 inches of space between each log. Cover with a kitchen towel and allow the dough to rise for about 40 minutes in a warm place or until the dough is about double in size. I usually just place my baking sheet on the back of the stove to rise.

Uncover the dough and cut 3 shallow slices in the tops of each one using a sharp knife. Brush with melted butter and then sprinkle evenly with garlic powder and Italian seasoning. Divide cheeses evenly on top of each one.

Bake at 375 degrees for 20-25 minutes until the bread is golden brown.

We always eat this warm, straight from the oven. ALWAYS. It is way too hard to wait for it, and it tastes so amazing when it’s freshly baked!

Of course, you could have a little more self-control than us and wait for it to cool.

Notes

You can use all-purpose flour in place of the bread flour, however you will get a slightly higher rise with bread flour.
